Buckwheat Pancakes

Ingredients:

  • 1 cup buttermilk
  • 1 organic brown egg
  • 3 Tbsp melted butter
  • 5 Tbsp all purpose flour
  • 5 Tbsp buckwheat flour
  • 2 Tbsp ground flax seed
  • 1 tsp white sugar
  • ½ tsp salt
  • 1 tsp baking soda

Directions:

  1. Whisk together milk, egg and butter. Separately mix the dry ingredients together.
  2. Add to the milk and egg mixture until just combined. Fold in some of your favorite fruit at this point.
  3. Cook in a teflon pan lightly rubbed with butter. Serve with fresh fruit and or syrup.
