HT Chicken Jambalaya Bake
Serves 6-8
Ingredients:
- 1 1/2 pounds chicken breast, boneless, cut in large dice
- 2/3 cup Harris Teeter flour
- 2 tablespoons Harris Teeter chili powder
- 3 teaspoons kosher salt
- 1/2 cup HT Traders Bold Olive Oil
- 1 large onion, chopped
- 1 clove garlic, minced
- 2/3 cup HT Traders Basmati Rice
- 28 ounces Harris Teeter diced tomatoes
- 1/4 cup chicken stock
- 1/4 teaspoon cayenne pepper
Directions:
- Preheat oven to 350 degrees. Dredge the chicken in the combined mixture of flour, chili powder and salt.
- In a large skillet, brown the seasoned chicken. Remove the chicken, and stir fry the onions, garlic and HT Traders Basmati rice 3-4 minutes.
- Mix in the tomatoes and chicken stock, bring to a simmer.
- Return the chicken back to the skillet, cover and place in the oven for 30 minutes.
