HT Spinach Lasagna
HT Spinach Lasagna
Serves: 8
Ingredients:
- 1 pound cottage cheese
- 1 1/2 cups Harris Teeter Mozzarella cheese, grated
- 1 Harris Teeter Large egg
- 1 (10-ounce) package frozen chopped spinach, thawed, and well drained
- 1 teaspoons kosher salt
- 1 table fresh oregano chopped
- 1/8 teaspoon freshly ground pepper
- 1 (26-ounce) jar Harris Teeter Traders marinara sauce
- 8 ounces Harris Teeter lasagna, uncooked
- 1 cup chicken stock
Directions:
- In large bowl, mix cottage cheese, 1 cup Mozzarella cheese, egg, spinach, salt, oregano and pepper.
- In a greased 9 × 13-inch baking pan, layer 1/2-cup marinara sauce, 1/3 of noodles, and 1/2 of cheese mixture.
- Repeat. Top w/ remaining noodles. Sprinkle remaining Mozzarella cheese. Pour chicken stock around edges of baking dish.
- Cover dish tightly with foil. Bake for 1 hour and 15 minutes, or until bubbly, at 350ºF.
- Let stand 15 minutes before serving.
