July 4th Cream Cheese Cookie Cups

Yields: 2 dozen mini cups

Ingredients: 

  • sugar cookie dough
  • 2 cups cream cheese frosting
  • blueberries
  • strawberries
  • non-stick cooking spray
  • one mini-muffin tin
  • frosting bag and tip (optional)

Directions:

  1. Preheat the oven to 350 degrees and grease the muffin tin with the cooking spray.
  2. Roll the cookie dough into balls (a little smaller than a golf ball) and press into the bottom of the muffin cups.
  3. Bake the cups 10-12 minutes, watching closely until they begin to brown.
  4. Remove the cups from the oven. After they have cooled, spoon or pipe the cream cheese frosting into each cup.

  6. Serve and enjoy!
