King Louis Crab Salad

Yields: 4 servings

Ingredients:

  • 1-1/2 lbs. Alaska King crab split legs,
  • 2 large tomatoes, cut into wedges
  • 2 hard-cooked eggs, cut into wedges
  • 1 cucumber, sliced
  • 1 avocado, peeled and sliced
  • ½ cup pitted kalamata olives
  • Lettuce
  • Lemon or lime wedges

Louis Dressing:

  • ¾ cup mayonnaise
  • ¼ cup chili sauce
  • 2 tbsp horseradish sauce
  • 1 tbsp lemon juice

Directions:

  1. Cut crab legs into 2-1/2 to 3 inch pieces.
  2. Arrange crab, tomato, egg, cucumber, asparagus and olives on individual lettuce-lined plates; garnish with lemon.
  3. Combine the ingredients of the Louis Dressing.
