One-Pot Jambalaya

One-Pot Jambalaya

Easy enough for a week night, impressive enough to entertain with. Plus, clean up is super easy with this One Pot Jambalaya Pasta recipe!

Ingredients:

  • 2 tbsp. oil
  • 1 ½ lb. chicken, diced
  • 1 red bell pepper, diced
  • 1 yellow pepper, diced
  • 1 lb. smoked sausage, sliced
  • 5 cups chicken stock
  • 15 oz. tomato sauce
  • 1 can diced tomatoes with green chiles
  • 1 tbsp. creole seasoning
  • 1 tbsp. garlic powder
  • 1 tbsp. paprika
  • 1 tbsp. onion powder
  • 1 lb. pasta
  • 1 lb. shrimp (optional)
  • 2 tbsp. chopped cilantro


Directions:

  1. In a large stockpot heat oil over medium heat. Add chicken and cook until white. Add remaining ingredients (except shrimp and cilantro).
  2. Bring to a boil stirring often, adding additional stock if necessary. Cook on a simmer for 20-25 minutes or until noodles are tender. If adding shrimp do so about 15 minutes after pasta.
  3. Garnish with cilantro and serve.
