One-Pot Jambalaya
One-Pot Jambalaya
Easy enough for a week night, impressive enough to entertain with. Plus, clean up is super easy with this One Pot Jambalaya Pasta recipe!
Ingredients:
- 2 tbsp. oil
- 1 ½ lb. chicken, diced
- 1 red bell pepper, diced
- 1 yellow pepper, diced
- 1 lb. smoked sausage, sliced
- 5 cups chicken stock
- 15 oz. tomato sauce
- 1 can diced tomatoes with green chiles
- 1 tbsp. creole seasoning
- 1 tbsp. garlic powder
- 1 tbsp. paprika
- 1 tbsp. onion powder
- 1 lb. pasta
- 1 lb. shrimp (optional)
- 2 tbsp. chopped cilantro
Directions:
- In a large stockpot heat oil over medium heat. Add chicken and cook until white. Add remaining ingredients (except shrimp and cilantro).
- Bring to a boil stirring often, adding additional stock if necessary. Cook on a simmer for 20-25 minutes or until noodles are tender. If adding shrimp do so about 15 minutes after pasta.
- Garnish with cilantro and serve.
