Smokey Balsamic Baked Beans

Serves: 6 cups (1/2 cup serving size)

Ingredients:

  • 1 tbsp extra virgin olive oil
  • 1 yellow onion, diced
  • 6 cups low sodium navy beans (drained and rinsed)
  • 1 tsp ground cumin
  • 1 tsp maple syrup
  • 1/4 cup chipotle peppers in adobo sauce
  • 1/4 cup Dijon mustard
  • 2 tbsp balsamic vinegar
  • 1/4 tsp freshly ground black pepper
  • ½ tsp kosher salt

Directions:

  1. In a large deep skillet or saucepan, heat oil over medium high.
        Add onion and sauté until golden.
  2. Add in beans, cumin, maple syrup, chipotle, mustard balsamic vinegar, salt, and pepper. Stir to combine.
  3. Bring to a boil, reduce heat, and simmer 20 minutes or until flavors have combined.
