Smokey Balsamic Baked Beans
Serves: 6 cups (1/2 cup serving size)
Ingredients:
- 1 tbsp extra virgin olive oil
- 1 yellow onion, diced
- 6 cups low sodium navy beans (drained and rinsed)
- 1 tsp ground cumin
- 1 tsp maple syrup
- 1/4 cup chipotle peppers in adobo sauce
- 1/4 cup Dijon mustard
- 2 tbsp balsamic vinegar
- 1/4 tsp freshly ground black pepper
- ½ tsp kosher salt
Directions:
- In a large deep skillet or saucepan, heat oil over medium high.
Add onion and sauté until golden. - Add in beans, cumin, maple syrup, chipotle, mustard balsamic vinegar, salt, and pepper. Stir to combine.
- Bring to a boil, reduce heat, and simmer 20 minutes or until flavors have combined.
