Soy Ginger Shrimp & Noodle Salad

Ingredients:

  • 1 package Simply Asia® Soy Ginger Noodles & Sauce
  • 1/4 cup Harris Teeter olive oil
  • 1 Tbsp Harris Teeter lemon juice
  • 1 Tsbp HT Traders soy sauce
  • 1 1/2 cups coleslaw mix
  • 1 cup Harris Teeter Fishermans Market cooked shrimp, peeled and deveined
  • 1/2 cup Harris Teeter Farmers Market red bell pepper, diced

Directions:

  1. Cook noodles as directed on package. Drain and rinse with cold water.
  2. Mix oil, lemon juice, soy sauce and sauce in small bowl until well blended.
  3. Place noodles, coleslaw mix, shrimp and bell pepper in large bowl. Add dressing; toss gently to evenly coat. Sprinkle with topping.
